Fix the existing unit tests, remove the now breaking unit tests and add in additional tests where needed.

Adds new unit tests to test a few new areas of the code and removes unit tests that tested the previous logic. Some of these tests are already run on the royal mail library, and have been moved there.

Tests implemented but not automated. Can still be run manually, but leaving open until automated testing is implemented.
